Vegan Dessert Recipes You’ll Love

Vegans for some strange reason have gotten a bad reputation for their cuisine. People just don’t believe that vegan foods can actually taste or look good. Be honest, when you think of vegan food, what comes to mind? Probably just boring salads. Well, today I’m going to attempt to prove you wrong by introducing you to 8 vegan desserts you’ll love.

1. Papaya Mousse

This dessert is extremely easy to make and you’ll only need a few ingredients. These ingredients will make 2 servings, if you want more, I suggest doubling it:
• 1 ripe papaya
• 7 cashew nuts (soaked in hot water for 20 minutes)
• ½ tbsp of chia seeds
• 2 dates
• a pinch of cardamon
• a pinch of salt
To cook this delicious dessert all you have to do is put all the ingredients into a blender and blend until smooth. It will literally take you 2 minutes. As a result you’ll have a beautiful, bright yellow mousse that you can serve as it is at room temperature or you can chill it in the fridge and serve cold and decorated with fruit.

2. Vegan Ice-Cream

Who doesn’t like ice-cream? It’s the ultimate summer dessert. But how do you make it without milk? Easy. All you need to make vegan ice-cream is a banana, or a couple of bananas, depending on how much ice-cream you’re planning to make. All you do is freeze the bananas for an hour or 2. It’s best to cut them up into chunks first and then freeze them. After they’re frozen all you need to do is put them in a blender and blend until smooth. It takes a while. Approximately 5 minutes. You’ll see the banana’s change their structure from solid, to crumbly, to smooth. Once they’re smooth your ice-cream is ready. You can add anything to this while blending to change the flavor. Cocoa, peanut butter and caramel are the best in my opinion.


3. Chocolate Chip Cookies

Turns out vegans can have delicious cookies too! All you have to do is substitute the butter with vegetable oil and that’s pretty much it. It’s easy to make them. First, mix the wet and dry ingredients separately and then second, mix them all together. Form into balls and bake until done. Here’s a list of ingredients:
• ½ cup coconut oil
• 1 cup brown sugar
• ¼ cup almond milk
• 1 tablespoon vanilla extract
• 2 cups flour
• 1 teaspoon baking soda
• 1 teaspoon baking powder
• ½ teaspoon salt
• 1 cup vegan chocolate chips

4. Vegan Fudge

This is another wonderful and easy vegan dessert recipe that doesn’t require much preparation. This chocolate fudge is delicious and will satisfy your sweet tooth, while still technically being healthy. You will need:
• 1/2 cup virgin coconut oil
• 1/4 cup raw almond butter (or nut butter of choice)
• 1/2 cup cocoa powder
• 1/2 cup pure maple syrup
• 1 tablespoon vanilla extract
• pinch fine grain sea salt, to taste
• 1 cup nuts of your choice
Just mix all of the ingredients together and freeze for at least an hour.

5.Vegan Cupcakes

There’s multiple varieties of vegan cupcakes out there. Just google it and you’ll see exactly how many different kinds there are. There is no way I can give you the recipes of all of them so I picked a classic – vanilla cupcakes. However, feel free to amend this recipe to your liking, and decorate them however you want. I think decorating these with strawberries and other fruit would make them even more delicious.
Here’s the list of ingredients:
For the cupcakes:
• 1¼ cups of flour
• ¾ cups of sugar
• 1 tsp. baking soda
• ½ tsp. salt
• ⅔ cup unsweetened almond milk
• ⅓ cup canola oil
• 2 tbsp. apple cider vinegar
• 2 tsp. vanilla extract
For the frosting:
• 1 stick of vegan butter, softened
• 3 cups powdered sugar
• 1/4 tsp. pure vanilla extract
• Splash non-dairy milk
The instructions are just the same as for normal cupcakes. Mix the cupcake batter, put into a cupcake tin and bake for 18-20 minutes. To make frosting just beat together all the ingredients until light and fluffy.

6. Fruit Salad

This one is a no-brainer. Just chop up any fruits you like and mix them together in a bowl. I suggest using strawberries, oranges, pine apples, bananas and kiwi. For dressing I suggest using lemon or lime juice mixed with honey. This sweet and sour mixture will really compliment your fruit salad and bring out all the flavours. You can serve this fruit salad in mason jars if you want to solidify your reputation as a hipster or you can also serve it in watermelon bowls.

 7. Vegan Truffles

These vegan truffles are so delicious, you’d never know they’re vegan if I didn’t tell you. To make you will need only 4 ingredients:
• 200g of dark chocolate
• 2 heaping tbsp Meridian crunchy hazelnut butter
• 1 tbsp maple syrup OR regular sugar
• Cocoa powder, to cover the truffles
Melt the dark chocolate, hazelnut butter and syrup/sugar together until smooth. Leave to cool and put into the fridge to solidify. After about an hour this mixture should be firm enough to hold it’s shape. Scoop out little portions and form them into balls, cover with cocoa powder. It’s really that easy!
